
How to stop overspending on bakery equipment without losing heat
If you’re running a big bakery chain, you know the headache. You need your food warmers to heat up fast, but buying a fleet of high-end machines can absolutely gut your budget. Here is how we handle it: we use shortwave infrared (IR) lamps. Most heaters try to warm up the air first, which is slow and wasteful. IR is different. It sends energy straight to the food. It’s like the difference between waiting for a room to warm up and stepping into direct sunlight. It just happens. Cutting costs through density The goal is to get as much heat as possible into a tiny space. That way, you don’t have to buy a dozen lamps when three or four will do the job. We use quartz glass tubes for this. Depending on where your shops are located, we tweak the voltage (usually between 230V and 400V) to make sure they hit the right temperature in seconds. By packing more wattage into every millimeter, the manufacturer spends less on parts, and you spend less on the machine. Simple. The secret to a longer life Cheap lamps burn out. It’s frustrating and expensive. To fix this, we use halogen-filled quartz tubes. There’s a bit of physics happening here where the halogen keeps the tungsten on the filament instead of letting it evaporate. This means the lamp lasts way longer, even when it’s working hard. Depending on what you’re warming, we can use clear quartz for a deep punch of heat or coated tubes if you need something a bit softer and more spread out. Plus, they use standard R7s or Sk15 connectors, so they just slide right into most commercial warmers. No fancy adapters needed. A word of caution on the build Now, there is a catch. Because these lamps are so powerful, they get incredibly hot in one spot. If you’re building these housings out of cheap plastic, they’re going to warp or melt. It’s a mess. To avoid that, we stick with aluminum heat sinks or stainless steel casings with plenty of vents. It’s all about that balance. You get a simpler, cheaper heating system, but the machine actually lasts longer because it can breathe.
